Our Growing Edge February Round-up

Hello my dears!

I’m back with a huge post – the February Round-up of Our Growing Edge! It was so exciting reading through all the different entries and experiences of our fellow bloggers. It is great to see so many new tips, experiences, recipes and experiences.

I want to start with the last submission that I received, because it is an extra special one. Paige from Vittles & Voyages went on a cruise holiday to Cuba with man to celebrate their third anniversary of their first date. On the incredible cruise ship, off the coast of Cuba, under the stars, her boyfriend proposed to her! Paige said yes! Oh and the ring, it is absolutely gorgeous!

I feel so excited and honored to have an engagement announcement on this months round-up of Our Growing Edge, I believe it is a first, and it was so perfect with the love theme. I wish both Paige and her fiancée Sean all the love in the world, happiness, luck, and success in the many years to come.

img_1000Andre from Andre’s the Home Baker, has submitted a few entries this month. I was literally salivation reading through every single post, and it was absolute torture looking at those incredible photos whilst I am on a diet!

Her peach & honey glazed cornmeal cake looks delicious and moist. When I saw the photos at first, I thought this would be impossible to make, but reading through the recipe, it actually looks possible! When I am together with the family again, I will most definitely be trying this one out.

IMG_8970How cool is this papaya coconut panna cotta pudding!! It is such a brilliant idea and a really original change to your standard panna cotta.

mocktailLook at this fabulous lemon, lime and mint mocktail from Lucy at Wood Kitchen ! After playing around with her camera, she has found a gorgeous way of photographing drinks. This very simple mocktail recipe has success written all over it. I normally make such drinks with still water, however, Lucy has used soda water as an alternative in her recipe. I am definitely excited about trying this one myself!

Slow-Cooker-Mexican-Chocolate-Zucchini-Cake-picTania from The Cook’s Pijamas has submitted this slow cooker Mexican chocolate zucchini cake. I’ve never made a cake with a vegetable before, but this looks worth a try! It is a fabulously exotic cake with a hint of cayenne pepper to spice things up.

wpid-20150208_191650These are steam from scallops from Foryneblog. This gorgeous Asian inspired dish made with oil and soy sauce, minced garlic, sliced ginger and green onions looks incredible. I don’t think I’ve ever eaten scallops before, let alone cooked them, but it is something I want to add to my foodie bucket list. I adore seafood, so I am really excited about trying this one out.

img_0270Sticking with the Asian theme, Melissa from Think Eat Repeat, has made these gorgeous dumplings. She’s right to say, I am getting hungry…. VERY hungry! They look incredible! I think I might be soy actually in love with them 😉 .  I think they might be too ambitious for me to make (and I highly doubt that Tess would be open to eating this), but I am fascinated to know how they are made. Maybe one day I will actually try my hand at making these, I am sure they taste absolutely delicious. YUM, this lemon and garlic confit from Liz over at spades, spatulas and spoons is a brilliant accompaniment to a variety of different dishes. Liz has used it both for her pasta with kale, as well as on chicken breast. I adore lemon, and I love the freshness it brings to dishes, so this is a wonderful new twist to spice of your dishes. Made with lemons, garlic and olive oil, this can be a staple in any household. I look forward to trying this out soon with some chicken breast.

DSC0350Jules from The Kiwi Diaries has whipped the perfect Valentine’s Day quick dinner. Starting the dinner with a beautiful risotto with shrimps, and concluding with mini berry Pavlova’s, this is the perfect dinner if you do not have much time to prepare an elaborate meal but still want something delicious. Oh Pia, you are a woman after my own heart. If there is something I adore, it is croissants. These easy to make, vegan croissants with surprise filling are a great breakfast or snack with a coffee. Making home-made croissants are on my to-do list, and the element of surprise filling is such a great idea! Head over to Pia’s blog over at Joie de Vivre and Cupcakes for more wonderful recipes.

3-drop-sconesMaddie from Supper Lovin’ made these wonderful drop scones with honey, cinnamon and icing sugar in honor of pancake day. This is just perfection, all the good things you want from pancakes, are in this recipe. What is more comforting than honey, cinnamon and icing sugar? I can easily substitute the milk in this recipe with lactose-free milk and I most definitely be trying these very soon.

photoSudha from Spicy, Quirky and Serendipitous has made this coconut milk chocolate mousse. I’ve never made anything like this before, so it is definitely a great addition to Our Growing Edge. I’m really interested to try this, and I’d love to know what the texture of the mousse is like using coconut milk.

These gorgeous mini cinnamon pretzel bites make me want to get up off the couch right now and into the kitchen to make them. They are the perfect addition to a cup of coffee and a relaxing weekend. parmesancrustedchicken1Look at this wonderful parmesan crusted chicken from Everyday Life Mother and Wife. This would be an absolute killer for my current diet, but it sure does look delicious!

chicken-fatteChristy from Christy’s Food Rush has made this wonderful Chicken Fetteh recipe. Middle Eastern food is right up my street, I absolutely adore it, and I am very happy that I have come across her blog. The addition of pomegranate seeds to the recipe add an extra element of freshness. All the ingredients in this recipe are things that I absolutely love, so I am incredibly exited to be trying this one out soon! Updates will follow as soon as I have made it 🙂

bbq1Last but most definitely not least, the brains behind this wonderful network of bloggers, Genie from Bunny Eats Design. She brings us 10 tips for charcoal barbecuing. Although it is still very much winter here in London, these are some great and valuable tips to know for when the BBQ season starts again.  Genie has sent her Koala hubby to man the grill that they got for Christmas. Those burgers look to die for! I can’t wait for summer to come along now.
